Turn Your Left Over Rice Into Tasty Chinese Fried Rice

Turn your leftover white rice into the best fried rice you ever had! Fried rice is one of my favorite Chinese dishes. Shrimp, beef or chicken, I love them all. When I go out for Chinese food, I always take all of the leftover white rice back home for making fried rice that lasts me several days.

It's simple to make, but you must have the right ingredients to make it taste like you bought it at your favorite Chinese restaurant. Here's what you need:

2 - 4 cups of cooked leftover white rice
1 - 2 eggs
2 - 3 garlic cloves chopped
2 - 4 tablespoons of Kikkoman Soy Sauce
2 - 3 teaspoons of Sesame oil
1 - package of frozen peas (optional peas & carrots)
3 - tablespoons of Peanut oil or Olive oil ( I always use olive oil because it is healthier but peanut oil is preferred in Chinese cooking because of its high burning temperature.)

A hand full of chopped fresh shrimp, chicken or beef chopped

This first step took me a long time to learn, but it is the most important part of the entire recipe. Beat your eggs as if you were going to make scramble eggs.

I use an old wok that I got at a garage sale but you can use any good frying pan. Place 1 tablespoon of oil into your pan and heat the pan to high. Before the oil starts to smoke throw in your eggs and beat until they are over cooked and start breaking apart into smaller pieces. Remove your eggs from the wok and place them into a container for later.

Now add 1-2 tablespoons of oil and ½ the chopped garlic. Everything should happen fast if you have your heat on high so be fast. Throw your shrimp or meat in the wok and stir fry for a few minutes until cooked and then remove from the wok and place into the container with the eggs.

Now add the rest of the oil and 1-2 teaspoons of sesame oil. Add all the remaining chopped garlic and a handful of frozen green peas. Stir fry for a minute then add the white rice and stir fry for another few minutes. Add all the ingredients that you put aside in the container and start putting in soy sauce as you continue to stir fry.

Taste it as you go along and you may want to add more soy sauce or sesame oil. Enjoy!

I spent two years in Japan and loved the way they served and presented fried rice to you in a restaurant. Here is this presentation trick I learned while in Japan.

Get a nice shaped Chinese or Japanese soup bowl and pack down your fried rice in a bowl. Place a flat serving dish on top of the bowl and now place your hand on top of the flat dish while turning the dish upside down. Put into the microwave for a few minutes with the bowl still on the rice.

When you take the fried rice out of the microwave remove the bowl and you have a nice shaped mound of fried rice ready to be served.

Tips and Techniques for Stir-Fried Rice

Many people that enjoy fried rice at Chinese restaurants are afraid to try to cook the dish at home. Using a wok is a foreign experience for many Americans, and they are simply unsure how to begin. While it does take a certain amount of technique to create a perfect fried rice dish at home, there are a few tips to ensure the dish comes out fluffy, light and full of flavor every time.

Rice is, of course, the main ingredient of fried rice, and therefore it should be picked and prepared with care. Use only long-grain rice in the dish as shorter grains have a higher concentration of amylose, which will create a sticky and soggy end product. Aromatic rices such as Basmati or Jasmine are also of the long-grain variety and can produce a sweet, aromatic dish. The rice should be steamed or boiled two to three days before making the stir-fry and stored in the refrigerator to allow enough drying time. For instances when waiting days is not an option, rice can be cooked, spread out across a baking sheet, and placed in the freezer for 25-30 minutes to speed up the drying time. The rice will produce a slightly different consistency, but will be better than using freshly cooked rice.

Measure and cut all ingredients before heating the wok so they will be at hand's reach when the rapid stir-frying begins. Some people prefer to cook each component separately to maintain each ingredient's individual flavor and then mix them together in the wok just before serving. Others toss all the ingredients into the wok to cook at the same time. When using the latter method, it is important to make sure the vegetables are cut around the same size so they will take approximately the same amount of time to heat.

The wok should be pre-heated before adding the cooking oil. Some recipes call for a medium heat while others call for higher temperatures; always set the temperature as per the recipe instructions. For best results, use an oil that has a high smoke point, like canola, grapeseed or peanut oil. Stir-frying garlic, scallions or onions in the pan before adding other ingredients will season the wok for added flavor.

The important thing to remember when stir-frying is to keep the food moving. Vegetables, meat and rice should be tossed and stirred constantly to prevent sticking or overcooking in the hot oil. Soy sauce or oyster sauce can be drizzled in for color and extra flavor, but should only be done at the end of heating time to prevent burning. Following these simple techniques can help any cook create savory, delectable stir-fried rice dishes at home.

Easy Recipes: Egg Fried Rice

I previously wrote about some easy recipes for lazy students who've never cooked for themselves, and today I'd like to continue in that series with a really tasty yet authentic recipe for Chinese Egg Fried Rice. My wife, being Chinese, makes this all time. And I love it!

Traditionally, egg fried rice is a dish designed to use up left-overs - you wouldn't cook up a batch of fresh rice just to make it, for instance. In Asian families, it's quite normal to have the rice cooker in constant use, so there is always warm rice on hand - which also inevitably means that sometimes the rice won't be that nice to eat on it's own, so that why egg fried was invented.

It's a simple recipe with a lot of room for customizing, with whatever meat and veg was left from last nights dinner - so don't feel like you have to stick to it rigidly.

Main Ingredients:

- 2 eggs

- 2 teaspoons of Sesame oil

- 300g of any regular or long grain white rice

- 2 teaspoons of salt, and 2 of pepper

- 1 spring onion

- 1 tablespoon of Soy sauce

Other things you might want to add:

- 100g Ham, Bacon, or Beef

- 100g Peas (frozen is fine)

- 100g bean sprouts

- Red or green pepper

- Really, whatever is left in the fridge!

Instructions:

I'm going to assume your rice is already cooked, and either sitting in a container in the fridge, or still warm in the rice cooker. Either is fine to work with.

Start by lightly beating the eggs, but not too much. My wife always fries the egg first, so pour a single teaspoon of Sesame oil into a pan and fry the eggs as if to scramble them. Don't cook them too much though, just so they solidify - you don't want them brown. Take them out and throw them back in the bowl for the time being.

At this point, how you make it will depend on what your ingredients are. Whatever you are using though, chop it up small. A really big Chinese cleaver helps this to go a little quicker! If you have uncooked meat, or fresh vegetables, then go ahead and fry them now. If everything you're putting in it is leftovers from last night, then you're probably good to move straight on.

This final step is probably the most difficult, so listen carefully! Throw everything in the fry pan with a little oil, and fry it. I know, it's difficult...

Constantly stir it, season with salt and pepper, and use your spatula to break up any clumps of egg or rice - mix it all up good! How long you cook it for is a matter of personal preference. Personally, I like to burn it a little on the bottom to get some nice crunchy bits, but whatever whets your whistle.

That's it for today, but you can find more egg recipes here, if you like. Next week I'll be posting some great authentic Chinese recipes from my wife, so be sure to check out my profile too if you have time.

Cooking Chinese Fried Rice at Home

Fried rice is perhaps one of the most recognizable Chinese dishes known to Westerners. It's also one of the rare takeout dishes that is also authentically Chinese, meaning that you will find it being served in Chinese households all around the world. Rice is the staple grain of the Asian diet and feeds more people across the world than any other food. Fried rice was born out of frugality, with cooks looking to do something with leftovers. Adding a few pieces of extra meat and vegetables to the leftover grains creates a complete different dish that is both tasty and economical. In some respects, you could make the argument that this dish is the original casserole. Making fried rice is easier than you think. Below are some tips to make Chinese fried rice at home.

First of all, you need to prepare the rice. Many recipes will call for day-old or cold rice, but that's not really necessary. The logic behind this is that when the grains are cold, they don't stick together, making a clumpy mess in your wok or skillet. While having cold grains is a bonus, it's not essential. After all, having cold rice on hand requires planning and many people are not going to have the forethought to prepare it for the next day. Indeed, freshly cooked can be used, but it needs to be cooled down slightly. In order to keep the grains from sticking to one another, you can add one or two beaten eggs to the grains and mix it around. The raw eggs will coat each grain, preventing them from sticking together during cooking. You should also add a pinch of salt at this time to season the dish.

Next, you need to prepare all of your secondary ingredients. These are the ingredients that will flavor your dish. As to what to put in, let your imagination run wild. The combinations are limitless. This is a great time to get rid of leftover or foods that are about to expire. For example, if you have some left over chicken from the night before, cut it up into little pieces for this dish. Perhaps you have some bean sprouts that are a little past their prime. Add them in as well. You can add almost anything to the dish and it will taste good. Cooks even add ingredients like pineapple when they are making it. The only thing that you need to do is to make sure that you have cut all of your ingredients up into small, bite sized pieces in order to have even cooking time and to make eating easier.

Once you have prepped all of your ingredients, it's time to get cooking. This is the one instance when having a non-stick skillet in your Chinese kitchen works well. First, you need to heat the skillet over high heat and add some oil or vegetable cooking spray. Once the pan is hot, you should add the rice. Let the rice sit on the bottom of the pan for one to two minutes undisturbed. After that, mix the rice around and continue to let it fry. You want the rice to have a nice, golden color and to look slightly crispy. Once the rice is done, remove it to a platter and keep it warm. Next, add in all of your meats and vegetables to the pan and stir fry until heated through. Return the rice to the pan and then stir to combine.

After everything is combined, you need to season your dish. There are two schools of thought when it comes to seasoning this dish. Purist will insist that you should not add soy sauce to the dish and that you should only season with salt. Others will say that you should add soy sauce or oyster sauce to the dish to boost up the flavor. The decision is up to you, but Chinese traditionally do not add soy sauce, although your favorite takeout restaurant probably does. Anyhow, whichever way you choose to go, you will still have a tasty dish.

Making Chinese fried rice at home is easy and a great way to get rid of leftovers. Once you learn the basic technique, you can adapt the recipe to suit your tastes and choice of ingredients.

In separate pan, measure out 6 cups of water and boil, add chicken; homogenized composite food salt.

Separately, wash 3 cups of rice (uncooked!) and FRY until they harden. Add to boiling water. Boil until rice and then evaporates water, which should be about 20 minutes.

Separately, fry meat and spices; when you add meat changes color dash cognac. Add the tomatoes and cook on a low flame. When it begins to boil, add tomato juice and rice and mix thoroughly.

First, you need to wash the rice thoroughly under cold running water, then soak in cold water for about 30 minutes. And place the rice in a pan with 4 cups of water, bring the rice to the boil, wait the liquid almost absorbed, cover and simmer in very gently heat for 10 minutes.

After 10 minutes, turn off the heat, remove the lid to let the steam out and set the rice aside. Heat 2 tablespoons oil in a wok, pour the eggs into the wok, stir gently until the eggs is set, transfer it to a bowl and set aside.

Add 1 tablespoon oil back to the wok, then add the spring onions (green onions) and minced garlic to fry for a few second if using. Add the rice, cooked eggs into the wok, and pour 2-3 tablespoons dark soy sauce over the rice, mix well and heat through over a medium heat. Season with some black pepper and serve hot.
